Propyl gallate is the propyl ester of 3,4,5-trihydroybenzoic acid. Propyl gallate (PG) is effective in vegetable oils and is synergistic with BHA and BHT.
It is heat sensitive at 148¡ÆC or above and has poor carry-through properties.
It forms color complexes with metal ions if they are not chelated.
It is approved for human use in the US, Canada, Japan, and many European countries.
